Baked Tomato Balsamic Onion Bluefish


  • 4-6 ounce bluefish fillets
  • 2 sliced thin tomatoes
  • 2 minced garlic cloves
  • 1/3 cup Balsamic Sweet Onion Jam
  • 1 teaspoon crumbled dried oregano


Preheat oven to 400 degrees. Season fish with salt and pepper to taste. In a baking dish just large enough to hold the fillets in one layer arrange the fish, skin sides down. Spread the Balsamic Sweet Onion Jam over the top of the fish. Top with garlic and tomato slices, slightly overlapping, sprinkle with oregano. Bake the fish in the middle of the oven, basting occasionally with the pan juices for 15 minutes or until just cooked Salt and Pepper to taste
