Lamb Chops with Mint-Fig Sauce


  • 8 - 4 ounce lamb loin chops, trimmed
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  •  cooking spray
  • 2 tablespoon Braswell's Fig Preserves
  • 1 tablespoon fat-free, less sodium beef broth
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon bottled minced garlic
  • 4 teaspoon chopped fresh mint


Preheat boiler. Sprinkle lamb with salt and pepper. Place lamb on a boiler pan coated with cooking spray; broil 4 minutes on each side or until desired degree of doneness. keep warm. Combine Braswell's Fig Preserves, broth, juice and garlic in a small microwave-safe bowl. Microwave at HIGH for 20 seconds; stir in mint. Serves with lamb.
